Eggnog Pancakes, Om Nom Nom

One of my favorite things about the winter holiday seasons is the return of eggnog. I love the stuff, and I’m always really sad when it goes. I have this really bad habit of buying more of the stuff than I can drink, though, and am always at a loss for what else to do with it. So, this morning I made eggnog pancakes! Here is the recipe.

Ingredients

1 1/2 cups all-purpose flour
1 Tbsp sugar
2 1/2 tsp baking powder
1/2 tsp salt

1 cup eggnog
1/2 cup milk
2 Tbsp clarified butter
1 egg, lightly beaten

Directions

1. Heat skillet or griddle on medium heat.
2. Mix all dry ingredients in a large mixing bowl. Make a well in the center,
3. Pour wet ingredients into the well, and mix well. If batter is too thick for your liking, add a little more milk.
4. Proceed to cook like normal pancakes. Eat and enjoy!

As for the clarified butter: if you don’t clarify it a little, the pancakes are more likely to burn before they’re done cooking in the middle. I clarified half a stick and wound up with more clarified butter than I needed, but I’m too lazy to do the math. At any rate, to clarify the butter, melt it slowly in the smallest sauce pan you have. Let it sit for a moment to separate. Skim the foam off the top and dispose of it. Carefully pour/measure the melted butter, without getting the stuff settled on the bottom, and voilà, you have clarified butter!
